Black Bean Quesadillas
Here's a recipe you may like to try. Sandra made it after we took a bike ride (15 miles :o) on Sunday. It's pretty easy and very tasty. Inexpensive too.
Black Bean Quesadillas
- 1/2 onion, chopped
- 1/2 green pepper, chopped
- 1 tsp olive oil
- 1 can black beans
- 1/2 tsp chili powder (or more if you like)
- 1/2 c low sodium salsa
- olive oil spray (or whatever nonstick spray you have)
- 6-8 low carb or whole wheat tortillas
- 1 c low fat cheese (whatever you like)
Cook the olive oil, onion and green peppers for about 4 minutes on medium heat. Add beans, chili powder and salsa. Cook for 3 minutes more. Then, in a shallow pan or a griddle, spray your olive oil spray and put one tortilla on it. Spread 1/4 to 1/3 of bean mixture onto the tortilla. Top with 1/4 or 1/3 cup of cheese and another tortilla. Cook about 1 1/2 minutes more and then flip it over to toast the other side.
